Hey there, I ordered an ipad and it's ready for pickup, tried calling the store and the person said they're not able to change the color. I also don't see an option on the order page online. Anyone have any luck when trying to change the color?

return it when it arrives and get a new one, you wont get one any time soon unless you manage to pick one up in a store as all stock has already been allocated to people.
No easy way to do it at this point... if the one you want is available at the store when you get there, grab it and they will exchange it for you.
The issue is that you reserved one for yourself... the rest are fair game for people coming on a first come, first serve basis!
