i have a 5K iMac from 2015 for personal use, but am moving in July and am losing a lot of desk real estate.

Thinking about getting an i7 mini and using the same Dell 27 1080p monitors I currently use for work setup, to run mini. Basically I would have HDMI switch to flip between work MacBook Pro and personal Mini.

I do a lot of editing (video and photos) on iMac. Just afraid I’m going to really miss the screen. But no way to fit iMac and multiple work monitors (a must) in setup.

I will add that these are the monitors. For 1080p, I feel they are pretty decent.

I did the same transition, a 2015 5K iMac 27" to an i7 Mac Mini 2018. I use 3 2560x1440 Asus 32" monitors and it all works well for me. I do not do video editing but the system works well.

Outside of the Bluetooth issues that are well documented I am very happy with the new Mini and those issues have been pretty well mitigated by not using the far USB port and relocating the external drives to underneath the desk.
 
1080p is pretty decent and very useable at 27", though it starts to be slightly blocky at 32". Since you already have the monitor, give it a try. Worst think you'd have to do is spend a couple hundred on a 4k monitor.

I went from a 5k 27" iMac to a 4k 32" monitor on a 2018 mini. I didn't notice a thing as all media content is either 1080p or 4k anyway.

If you are worried about desk real estate, you can always just shrink the icons, the empty spacing, and text to make up for it.
