I took the sim out of my old iPhone because I thought it would transfer to the new one, but when he put it in, there was NOTHING on it. How can that be? I synced in iTunes before I took it out, but still...I find it bizarre and a little disturbing.

What did you expect to be on the SIM? The iPhone does not store contacts on the SIM hence there being nothing on it.

I guess that's sort of what I expected because with regular phones it's that way and no one ever told me differently. The guy at AT&T actually seemed surprised there was nothing on it, too, LOL

Lol AT&T just sells the thing they don't know much about it. The reason you sync your iPhone with iTunes is so it stores your contacts on your computer. The SIM on the iPhone is just for the wireless service.
