Anyone have apps randomly being deleted with iPhone 7plus?

No but when I restored my 7 from my 6S iCloud backup it restored about 80 apps that I deleted 3 days earlier in an effort to make the restore go faster and the new phone not have so much crap on it. And yes the last backup I did was completed just minutes before I did the restore (and days after I deleted the apps). The deleted apps all came onto the new phone outside of a folder at the end of my last page of folders. Was really annoying.
