Supposed to be a mid-2015 15" rMBP, 2.5gHz 256gb machine. Apparent model #: MJLQ2LL/A; but the back of the box says part number: Z0RF0001Q.

Looking for more details - any difference between the two?

As far as I know, model number is the model of the machine, and the part number is the specific unit you have. I.e. any similar computer would have the same model number, but the part number is like a serial number, unique to that one.
 
Hrm. Strange. Could it have anything to do with the fact that this model came with the 2.5gHz spec compared to the normal 2.2gHz for the standard MJLQ2LL/A?

I think you've misunderstood me. On all Macs, part number and model number are separate. MJLQ2LL/A defines what the machine is. The part number describes which of the many ones produced it is. And yes, this means it specifies your build to order options, but a normal/standard MJLQ2LL/A will also have a part number that is different from the model number, and a separate MJLQ2LL/A with identical specs to your machine will have a different part number from the one you have.
 
Ahh makes more sense. Just curious as to why, on this box of this one, the model number does not show whereas the part number: Z0RF0001Q number does. On other boxes of the 2015 15" rMBP, the model number is shown on the sticker on the back. Perhaps just differences in stickers between the manufacturer dates.

That I can't tell you, but that could have to do with it being built to order
