Am I being slow, or did Apple sneakily change the mic/remote on the standard earbuds when no-one was looking?

These were updated with the iPod refresh last month if I remember correctly.
 
so far it is said they are not fully functional with the iphone, i hope they will release some sort of update to fix that though

I believe these are two different updates. The one you are referring to is the new IEM and to my knowledge no word on an update to these. However the OP is referring to the standard in box and replacement headphone.

i just got my iphone last month and they go and make my headphones
obsolete already?

a volume rocker would've been great since i go to the gym and wear

Apple announced 2 new earbud models at the 3G event...the pair in the OP's pic/link, and the IEM dual driver model. Neither of these have been released yet. The ones that come with the iPhone are the same as ever.
