Looking to get a external monitor on my 15" early 2011 MBP and was initially looking at a 27" Apple display but see I can get 2 x U2711 for a similar price.

Wondered if I can run both of these at 2560x1440?

Not on a 2011 MBP.

At work I run my MBP display and two external monitors, with one of them off a Kingston Multi-Display USB Adapter, which according to the specs supports 2048x1152.

Think this would still be a good setup, i.e one at full resolution and one at 2048x1152.

Personally I can't stand using a monitor at non-native resolutions, but your mileage may vary. It never looks right and is blurry. But it's a personal preference.
