I just moved mine over to a US cellular plan, with an Apple Watch plan, and when I go to cellular in the Watch app it says my model won’t work in this region.

It has the right LTE bands to work (Band 5) and there are reports of people taking US models to other countries and still getting cellular to work.

Is it possible to make a US model work in the UK/Europe, but not vice versa? If that’s the case then I’d swap my UK model for a US one as that would allow me to use cellular in both markets (although plans in both markets are required).

 watch models are country specific as far as I know.
Not country specific but region specific as Apple has clearly indicated for both the Series 3/4 Cellular units.

To cover the LTE and UMTS bands used around the world, there are two separate models for Apple Watch Series 4, and three for Apple Watch Series 3. They have been optimized for use in the country of purchase, and not all models work in all countries or regions. There is no single model that supports roaming worldwide. To see which carriers in your country or region offer cellular service for Apple Watch, refer to the chart below
