1/4 way into this video when Leo points at the screen, it has what looks like two vertical strips on it, like command-tab interface. I think I've also seen these in the Apple store, what are they exactly?

It looks like Disco, the CD burner.

If this is what you mean, it's disco, an advanced burning peice of sowtware...

I believe the OP is referring to the application launchers on the Desktop on either side of Disco. You see them on the Apple Store demo models, but Apple uses a custom piece of software for that, and it's slightly different. Docktop is a similar program available to the public...I'd imagine there are others out there, but I don't know which one is being used in that video.
