I want to use MainStage for live performances.
All I need to do is play 2 or 3 software instruments with a midi keyboard as well as a backing track.
I would only ever be playing one software instrument at a time, so for any given song it would just be one software instrument and a backing track.
I've found a couple pretty good deals on i7 2012 MacBook pros and wondering if one of these might be sufficient.

I have a 2011 27" iMac i5 and have used Mainstage several times. It works fine playing two midi keyboards and software instruments simultaneously. I don't think you'll have any issues using the 2012 Macbook you've found.
