I love the durability and the clicking clack of the old IBM keyboards. Anyone know of anything close to that type of quality and durability for a Mac keyboard?

Well, you could simply get an old IBM keyboard, clean it and use it.

Or you can get a new recreated one with the older and better "Model-F" technology (compared to the more common "Model-M"): https://www.modelfkeyboards.com/
I ordered a modelF a few years ago for my PC. I love it.

I don't think there is a snowball's chance in hell of finding a old-style IBM keyboard made for a mac. Just the PC keyboard that matches what you want and change the keybindings.
