Aperture 2 printing to Epson 3880 - how do I use Matte Black

Hi,

I'm printing from Aperture 2 (OSX 10.6.2) to an Epson 3880 and no matter what I do it always causes the printer to use Photo Black. What do I need to do to be able to print using Matte Black?

1. I have tried defining and activating a custom paper.
2. Manually switching to Matte Black.

But when I print the printer always reverts to Photo Black.
