I have a 2.16 C2D iMac with the 128MB X1600 currently (20"). I use Aperture a lot on it but I'd like to maybe add a second 17" LCD. Would that be doable, or what that slow down Aperture to the point of being unusable ?

I have a 2.16Ghz C2D MacBook Pro with 128mb X1600 too 
I use it for Aperture with my 20" LG Widescreen (1680*1050) over DVI as primary screen, and the 15" (1440*900) built in display as secondary. And there is no issue.
Seeing as you'll be running with a lower resolution (unless you've found a 17" WS with a 1440*900 resolution), it'll be a non issue.
