Hey, I am confused about if I should be formatting a drive used just for data as APFS or Mac OS Extended? Seems like a pain to have to deal with the dual drive ejection nonsense with APFS but not sure if there are performance enhancements with APFS or what.

APFS is best for flash or SSD. Mac OS Extended (Journaled) [i.e. HFS+] for spinning disk, especially if you plan to use the disk with an older system. If you plan to use Time Machine, you'll have to use APFS regardless whether the drive is SSD or HD, unless the drive is formatted HFS+ and already has a Time Machine backup on it.
