My work requires me to interview clients regularly. I have a MBP and two Yeti USB mics.

I'd like to have an app that allows me to record the interview in mp3 format in a small-ish file size. Interviews typically run about an hour.

What's that best app or way to accomplish this? TIA.
 
The recording is rather easy, as noted.

But I found applications like Pear Note and/or Transcrivia far more helpful. They allow you to type in annotations, which allow you to then jump to that place in the interview. For example, you could have written "depends on what the meaning of is is" when Bill said that during the interview. Then you click on it and go right to that spot. There are probably other similar applications.
