Or do you want to know, what iOS apps are shown?
I am just confused by the "in" part of the first sentence.

Anyway, if it is the first, then it probably is just Adobe After Effects, and the text is animated and it is called "Kinetic Typography", which will you get dozens of free tutorials, if you want to try it out on the 30 day trial of AE.
I can't watch the second video due to my location and corporate censorship.

If you are looking for a much cheaper version and mainly want to do text animation, you could try Apple's Motion from the App store. It's 50$ (or 40€) and a little easier to understand. Certainly less powerful, but if you haven't heard of Adobe After Effects, I am pretty sure that it will be overkill for what you are doing. :)

And if there is one thing that Motion is almost as good in as After Effects, it is kinetic typography.
