iPod touch App Icons Missing after iTunes update

I updated my iTunes to the latest version the other day, and when my iPod Touch 2nd Generation synced to it, some of my icons disappeared. It is not just the ones I have downloaded, because some of the Apple ones are missing as well.

I have tried to delete them off my iPod then reinstall from iTunes with no luck. So far, the icon has only come back when an app has an update.

Any suggestions?

not jailbroken and 4.1

it happened after I installed the latest iTunes update. The weird thing is even the preview in iTunes shows the app icons missing as well.

I am restoring the iPod now to see if that works.
