I have an update for Facebook in my Apple App store and don't want to use it since everyone was having trouble. Is there a way to not update and get the number "1" off the app on the home screen?

Don't think so. The "1" will remain there until you update I think.

yea, you can't get rid of it as far as i know.

Facebook fixed the problem, just download the update

I believe a lot of the folks having issues were those who are using jailbroken devices. I know that was the issue in my case - a conflict between BiteSMS and Facebook caused Facebook to not work. BiteSMS has since posted a workaround, however, and now both apps work great.
