i do a lot of Judo and Brazilian Jiu Jitsu. You cannot wear a watch (or any jewelery or hard objects) during these activities because of risk of injury.

How can I record this exercise so I get “credit” for it on the Apple Watch daily rings and such?
 
Believe most of the exercise apps will allow you add activity. I have left my watch at home accidentally. I know Runtastic will allow for adding activity, especially Martial Arts. It does ask duration and estimates calorie burn based on your profile metrics. As long as you allow the apps to add and read heath data; it will transfer to your Activity/ Workout apps and move your rings.
