I realized I currently have the setup I need to compare this. I have a set of AirPods Pro 3 paired to one phone, and an Apple Watch paired to another phone. I started a workout from the Fitness app on the phone paired to the APP3, while at the same time starting a workout on the Watch. And I ran both workouts for the same duration. Result -- the two readings stayed pretty much within 5-10 heartbeats of each other.
Note that this is for a Meditation session, so I was just sitting still the whole time. If anyone can do this with a running or walking workout, I'd be very interested. I just don't feel confident enough about the AirPods staying in my ears to take them out on a walk.
