can the ethernet port on the the airport express be used to plug in a non wifi piece of equipment

example I have a wireless router

wifi to airport express to (via ethernet connector) to xbox360

do i have to have an apple router or will my linksys wrt54g work fine?
 
it will join the network from any base station.

If you want to wirelessly extend it needs to be an apple base station. but as long as you are happy with your current wireless range you don't need this.

if you are getting a used one, it needs to be the newer 802.11N version, they've been out for a couple years though.
