Hey there!

I was thinking, what if my Intel MBP 16 breaks in a few years from now and I have AppleCare+? Will they replace it with an M1 comparable product or do they always have Intel chips for these cases?

"In a few years" it may be deemed an obsolete or vintage product and no longer supported. Apple doesn't publish a timeline for product hardware support. If it's before then, you can assume replacement parts would still be available. If you want to hear it from the horse's mouth, so to speak, you can call the Applecare Admin Department.
