Can I buy a touch, wait for the 1 year warranty to run out (the one that comes with it) and near the end of that year buy the apple care kit for another 2 years of warranty? I'm looking it up and it is hard to find this info....

You can buy Applecare any time up until the end of that first year, so you can buy it on day 364 in you choose. However, you cannot buy it after the first year, so you wouldn't be able to buy it on day 366.

I believe Apple Care for iPod's only adds a 2nd year, not a 3rd year to the warranty.
