Is there anyway to connect my iPhone to my car radio to do Carplay and somehow plug it into a car charger to have it charge? Whenever I use the USB port in my car to use Carplay, my iPhone barely charges and charges super slow. Is there any type of splitter or workaround I can do where I can connect it to the car charging plug and USB for Carplay?
 
No. Unless you upgrade you head unit to wireless Carplay you are stuck with the slow charging.
 
You can buy a Wireless Carplay adapter and buy a MagSafe or Qi charger for wireless charging and wireless Carplay.
This is what I have done and it works nicely + the phone charges faster over MagSafe than the in car built in USB charger.
 
There is a lag, but it only gets in the way if you watch a video; the audio is delayed compared to the video.
For anything else like streaming music or GPS navigation the half a second lag doesn't really matter, it doesn't interfere with the usability.
For me the convenience of going fully wireless in the car and also fast charge at the same time is worth the trade off with the lag.
 
It's all going to depend on your head unit. I have an after market unit in my vehicle that provides two USB ports. One for CarPlay (though it also does wireless CarPlay) and one for charging only. Don't have any problems with any of my iPhones, including my Max's.
 
I'm not certain but can't you continue to use wired CarPlay while the phone sits on a MagSafe charger.

Wire plugged in does two things,
Reduces magsafe to 7.5w if its an accessory
charges from wire instead of wireless
