I missed this statement on my first viewing.

“This [Dolby HDR recording] is enabled by our Apple custom sensor and the incredible power of the A14.”

Previous iPhones used Sony sensors. Previous rumors suggested Apple might use the Sony IMX686 in this year’s iPhones.
