When typing text, it shows suggestions and those suggestions stay there . no way to cancel them

how can we report to apple to get it fixed?

Could you elaborate?
Lets say you have a doctors appointment on a particular day. you set the appointment.

lets say you have another appointment, and if you want to enter text , the previously entered text displays as the suggestion. this is annoying and can't be cancelled.

I cannot recreate that. Maybe some kind of bug. Have you tried rebooting your phone?

Am seeing (and enjoying) it. That suggestion (can be up to three) is however not covering anything up, it just sits there and can be ignored. 🤷‍♂️

I know of no way to not get these...

I too enjoy this feature; it saves time when creating a new event quite often.

You can disable a lot of these Siri suggestions. I disabled nearly all of them, if not all of them.

A few years ago, I found instructions on how to delete cache files in MacOS, which cleared these all out. I don't mind them to a point, but it remembers every damn appt or meeting from the past. That said, those files are no longer in Sequoia, and I can't find anyway to clear them. I've spent way too much time looking and there is just nothing. Apple completely overhauled how this function works and there is no information.
