I want to know if it is possible to use different subnets on each of the LAN ports on the Apple extreme? And if so how would one do such a thing?

No. AirPorts do not support subnets per LAN port. The only difference in subnet is between the guest Wi-Fi network and regular Wi-Fi network. If you are looking for a good router that supports more advanced features like that then I highly recommend the Ubiquiti EdgeRouter Lite and an accompanying wireless access point or AirPort in Bridge Mode.
