Just wondering If I can use an apple store gift card to purchase itunes credit somehow. Whether online, or in store I'd like to use some of the gift card money to use on itunes.

Yep. Go in store and pick up an App Store voucher and find a clerk. Simples.

What you can't do is take an App Store card in and swap that for a gift card.
