I updated to 15.3 yesterday and once installed I disabled apple intelligence. Just had a look at my storage now and it says, under "macOS" that apple intelligence is taking up 5.45GB of space. How do I get rid of that?

Likely that /System/Library/AssetV2 relates to Apple Intelligence (13.9GB on my AI enabled MBP). But, be careful, as my Intel Mac (AI not supported) has 12.9GB in that folder. So, if that is the right place, deleting stuff may have unexpected side effects.

The MBP has two large folders /System/Library/AssetsV2/com_apple_MobileAsset_UAF_FM_General (4.8GB) and /System/Library/AssetsV2/com_apple_MobileAsset_UAF_FM_Visual (4.5GB) which are not present in the Intel Mac. So you might want to start by understanding their purpose.

Give it some time. Turn it off and leave it off. The system will eventually clean it up within a week or so once it detects you're not using anymore.

They probably leave a little buffer time just in case you decide to turn it back on, or only wanted to turn it off temporarily, so that you don't have to redownload everything again.
 
I'm curious as to whether people are actually seeing the disk space taken by AI decline over time when the feature is disabled. I have a new (5 day old) iMac with 512GB of storage. I turned AI off immediately during setup, but it's still showing what I believe is a high amount of file space -- 14.2GB. I have rebooted multiple times. Anyone else seeing this high usage after having AI disabled?

/System/Library/AssetV2 : 3G49 here on 15.5 with AI disabled from the start.

Details: most directories have the same mtime as the last upgrade,
several others were probably updated yesterday and today.
I do not understand the difference with the amounts above.

AssetsV2 1.39GB in a virtual machine, that is not allowed by Apple to run Apple Intelligence.

Although Siri has never been enabled, macOS still downloads 871MB of UAF_Siri_Understanding.

All the folders in /System/Library/AssetV2 can be deleted from Terminal in Recovery or with SIP disabled from Finder. macOS will download again what it considers it needs.
