Apple Mail Deletes Quoted Email Threads

Hopefully someone can help with this. Randomly, when I reply to emails on an email thread/chain, the quoted email text from other users will disappear. It shows up when I'm typing and hit send, but the receipient won't get anything below what I had JUST written. Has anyone experienced this and knows how to correct?
