Apple Mail - Font Help

I'm playing around with the font settings in Apple Mail, but I see no option to revert to the default setting of 'System Font Regular". Any ideas?

Also, what's the difference between "message list font" and "message font"? If I change the font settings, only the font inside the email actually changes. The font of the reading plane, so to speak, remains the same.

Massage list font is the word's font in the list. if you change the font in the preference, the list font also changed and seems can't back to the default.
