A friend of mine recently changed his e-mail address, so I deleted his old one from my address book and replaced it with his new one.

Simple as that, right?
Wrong.

Now the old e-mail address keeps popping in mail whenever I enter his name and hit enter. Mail does that (auto-filling) for all recently used e-mail addresses and address book entries, but worst of all is, it keeps selecting the old address as the default one?

So I find myself sending messages to this person, only to discover a 'address not in use' response in my inbox a few seconds later.

Any way to delete an address from the recently used database or at least change the address book entry to be the default one?
 
Under the Window menu, select Previous Recipients.

This is assuming you don't have him listed in Address Book. If you do, you'll want to edit his entry.
