I want to try to use the Google Active Sync (Exchange) server instead of IMAP on Apple Mail.

How can I force Apple Mail to not automatically configure IMAP...
 
Holding the option key will turn the "Create" button in the Add Account window into a "Continue" button, which will allow you to set it up any way you want.

EDIT: Unless of course you're on Leopard, in which case it's a simple checkbox, "Automatically configure account." I'm assuming you'd have seen that though.

Apparently, Snow Leopard only supports Exchange server using EWS (Exchange Web Services). And Google did not implement the EWS protocol into Google Sync. Google Sync only supports ActiveSync.

I was going to try to manipulate the Google Sync product to give me Exchange access to Gmail, Calendar, Contacts on my Macbook Pro.

I'm currently using Google Sync for my iPhone and it works wonderfully!
