I have three different email accounts plugged into my Apple Mail.

So, when I send an email message to anyone, Apple mail automatically
picks the account (and SMTP server) it wants to send from.

I did not see this option under preferences, but is there a way I can
tell Apple Mail that I want to send all my emails from one account
(and SMTP server)?

In another words, there must be a way to put a pecking order to
the list of accounts appearing in the FROM: field

If you have multiple email accounts anytime you compose a mail, there will be a pulldown box in the compose window that says From: which allows you to choose which account to send the mail from. The setting I describe simply details which account should be shown by default.

If you want to see which account uses which server, then you can go to Mail->Preferences->Accounts, select the account you want, and look at the outgoing mail server.
