Apple Mail question

I used to be able to highlight pasted text, right click, and the contextual menu would appear with both Fonts and Colors choices. These two options have now disappeared. Now I can only use the icons. Did I change a pref without knowing it, or has something else happened? I'm running on Tiger 10.4.11.

You could also use cmd + T; much faster IMHO.

I'm using a Mighty Mouse, so it's fairly easy to right click and select the menu option. Do you have any idea why the options are no longer available?
