Anyone use an Apple Pro Mouse with their "newer" Macs? Currently I am using a wireless Mighty Mouse but I've always REALLY liked the look of the Pro Mouse and it being USB is good. But, my only worry is the lack of trackball. I didn't realize how much a trackball/scrollwheel is used these days.

Also, I believe there is only one click function, correct? They don't have the left and right touch sensors.

They don't have touch sensors - you'll have to use a control-click.
Anyways, I think the trackball is the biggest seller, especially since you can scroll inactive windows...
