I've ordered a BTO comp from an Apple retail store before (at least they added some RAM to an iMac I bought for my cousin once).

So are you saying anyone wanting a 3.0 or 3.2 "must" buy online now and / or in the future?
 
Yes.

And RAM is a little different, you can have ram added "BTO" in store. But really what they are doing is opening the box and putting the extra sticks in.

I was told at the Apple Store they would carry an "Ultimate Edition." They didn't say exactly what the specs where on that, but they are calling the base 2x2.8 config their "Standard Edition."
 
They only had the 2.8 models in stock here in Seattle, WA. They said they're getting the 3.2 models next week.
