Checked in Southwest area of Californa and not one store has one available for a 128GB Space Gray with Verizon.

I would suggest ordering one online. If you then find one locally you can cancel your online order or return the local unit when the online unit comes in. Otherwise you may find yourself without for some longer-than-necessary period of time.

Think of the online order as an insurance policy of sorts.

I checked the ChicagoLand area, and there are no iPad mini with Retina display Wi-Fi + Cellular available at any of the stores.

There are Wi-Fi only iPad mini with Retina displays available in Chicago and elsewhere.
