I see online that the pro Max versions of the phones are not listed. So does this mean if I go to the local Apple store they won’t have the 11 pro max or the 12 pro max??

I noticed this too. I'm hoping that apple will selling the 11pro max refurbished down the road, possibly replacing the Xs that they currently sell as a refurb.

The reason it's not for sale by Apple is because many people would choose it over the 12 max. Bad for business.

At least listed in Canada under iPhone12Pro then hitting "Buy".

Apple no longer sells the 11 Pro max and has been replaced by 12 Pro Max. Once apple announces the new product, Apple stores can still sell the remaining stock of what they have on the shelf, this you may need to do directly from the store. However, I believe they only stick around a short period as eventually Apple headquarters will request them to be sent back.
