I have the Lightning to USB 3 Camera Adapter, and I use it to plug the Apple Ethernet tu USB adapter to get internet.

It works with all my other iPhones and iPads: iPhone 5s, SE, iPad Mini 3, iPad 4.

But, when I try it with the Ethernet adapter on my iPhone 6 Plus, it doesn't work.
Also, in the case of the iPhone 6 Plus, the power MUST be fed from the wall plug (instead of from the iMac with my other devices), otherwise, the 6 Plus wouldn't charge up.

Have you tried getting wired internet with a 6 Plus?
 
I have no idea what you are trying to do?

are you trying to use your phone as a router/modem for your mac? why not make your phone a hot spot instead of all those converters and wires
 
I just want to surf the internet from my iPhone, via an Ethernet cable, instead of wifi, because it's much more stable for large downloads.

You can share iPhones internet connection with your Mac via a lightning to usb cable... this article explains how to use iPhone to access internet from Mac over WiFi or Bluetooth or usb.
