I am wondering what device would be the best for what I am trying to do. I only have interest in streaming media from my imac to my TVs. No other interest.

I would love the ability to stream 1080P and 4K video to my TVs and am wondering if an Apple TV 4K would do the job or the new Amazon Fire TV with 4K would do the job (using Plex).

Oh my gosh, DEFINITELY go for the Apple TV 4K. You will not regret it. I love mine. It will play beautifully with your iMac and an iPhone if you have one. With its A10X chip, it's incredibly capable.
I know you said that you only have interest for a certain thing BUT, you may fall in love with renting a 4K Dolby Vision / HDR film from iTunes on a special occasion.
The Apple TV is a wonderful experience. It feels high quality, just like a Mac!
I've been using ATV for 7 years now and everything else out there to me looks so cheap and poorly implemented.
ATV is a great long term investment. With HDMI 2.1 released this week, we'll no doubt see the ATV evolve over the next two or three years to 120fps for games and maybe video, variable frame rate playback (like ProMotion) etc. Very exciting times!
