I'm going to London next week and was wondering if I could walk into the store and buy a SIM-free iPhone 7 and get a VAT refund on the purchase? If so, what will be the model number? A1660?

In the UK, the price for 128gb iPhone 7 before VAT is 582.5GBP = $756.51 while in the US, it's $749 plus NY tax 8.875% = $815.47

The difference is only $63.96 but in the US, SIM-free models are not yet available and would probably not become available until mid-end October at the earliest.

EDIT: Looks like you wouldn't get the entire 20% VAT back. After fees by taken away by GlobalBlue, it will be around 11%. So the price after the VAT refund will be around $808, still a bit cheaper than here in the US but the refund will be converted to USD with their exchange rate, so the price difference is insignificant if not none. Furthermore if the model is A1660, then I can just buy Verizon unlocked phone here...
