My daughter has the AW 3 it won’t update keeps saying storage is full but there’s plenty of space. We tried to reset it and set it up as new, but still says same thing.
 
as you’re finding the Apple Watch 3 only has low storage and, I think, needs at least 3 Gb spare for the update.
The only way I could install watchOS 7 was ...
1. Unpair and reset the watch
2. Re pair the watch but setup as new
3. Remove as much as possible from the watch...unused watch faces, Apps etc.
4. Check the watch has at least 3 Gb
5. Update the watch
6. Unpair and reset the watch
7. Re pair the watch and either set up as new or restore from a previous backup (but not the one from 6.)

Since I only use mine for sleep tracking I’ve more or less decide I won’t bother with any further (major) updates, too much ‘faffing’ !
 
You’ve not given us much to go on...how much is “plenty of space”? And what are you trying to update to?
 
I though update 7.0.3 only addressed watch 3 random reboots ....
Also how do you ‘get’ to 7.0.3 if you can’t ‘get’ 7.0 ?

This. I’ve had this issue for a while and had to go through these steps for it to work. It also took forever to actually download and then install the update. I went to bed with it stuck on “preparing” and woke up to it being completed. Had my iPhone next to it the entire time. I have noticed space is starting to fill up again :/
 
Which watchOS version ?
Apple recently released watchOS 7.0.3 that should address this issue
I think watchOS 7.0.3 was only for the random reboots the Series 3 was dealing with.

Although, if they also fixed this storage “bug” that’d be a welcomed improvement.

I don’t think it’s a bug though, the watch simply can’t download and install the update without the right amount of storage, which is unfortunate given, imo, the Series 3 still has plenty of life left in it.
