I have the on-all-the-time setting OFF on my Apple watch 5, but many times when I look at the time it starts with a dim display and gradually gets brighter. Say all within a second or two, but it's annoying after a while. I went through any possible settings, is this a common thing or is there a specific setting that makes it go full brightness quicker when my wrist is turned?
 
Might be an obvious answer but it’s perhaps due to ambient light levels.

My AW5 is usually under my sleeve. When I ‘flip my wrist’ to see the time it does go brighter as the watch is pulled from under my sleeve.

Perhaps something similar to you?

I want to say "of course it's not that simple" but that doooeeessss sound a little bit familiar... the sleeve is usually part of it.

So it's actually already on from the flip of the wrist by the time I see it, but when it's exposed to more light, that's what makes it brighter? You definitely described it very much how it seems. 👍

I think you were right, Jem. Today with short sleeves it doesn't seem to be an issue at all. Thanks for taking the time to write.

Actually, as a measure to fix it now, does anyone know of a way to disable the ambient light think on an Apple watch 5? I wouldn't be surprised if there isn't one.
 
There is an ambient light sensor. Bad news for you is that it is behind the display. Look at this article, point 2:
What you see there is the back of the NFC chip. The thing on the front (the tiny chip that is visible) seems to be the ambient light sensor. There is a tiny slot on the back of the display that allows light to pass through.
I always wondered what this thing is when replacing displays and transferring the NFC. Now I know. Cool tech.
