Apple Watch 7 and iOS 14.8

I'm going to try new series 7 when it appears on market. Now I am on S5.
There is one doubt that came out lately. My iPhone 11 Pro is running iOS 14.8 and I wouldn't like to make upgrade to 15 at the moment. Will it be possible to use iOS 14.8 with watchOS 8?

you would need ios 15 as the series 7 will come with watch os8 pre installed and cant be paired to anything below ios 15
