I never thought I'd buy an Apple watch. But maybe I will. i own a Suunto Core that i really like. If the Apple watch can match it's functionality I might get an AW. I'm most interested in day/date, altitude, sunrise/sunset, weather warnings, timer, dual time. Less interested in compass. I take that Core everywhere. It's intended for rough conditions. Can the AW do all that? Thanks.

Apart from altitude, yes. I guess there should be an app about it.

watchOS 5 will have Hiking workout that stores altitude data so I have a feeling Watch S4 will be able to show that somehow.
 
Apart from altitude, yes.

AW3 does have a baro and can calculate altitude directly but probably calibrates this from geo data read over cellular.

AW3 lacks a compass but you could do this from the iPhone, however, nobody really uses that when the situation calls for a proper reading with the Core and would use a real compass instead.

Probably the single most important thing that the Core does and the AW doesn't is the ability to run in storm warning mode where you lock in your current altitude and stay at that level (overnight camp) and the Core can alert you if the baromewtric pressure changes rapidly.
