I have a unique situation (or maybe its not unique... we will see). I have an iPhone that is provided my employer. I have an LTE Apple Watch. I have been unable to use the LTE portion of it because the watch and iPhone have to be on the same carrier plan. My employer provided phone is on an AT&T plan paid by my employer. The rest of my family is on our personal AT&T plan. I tried to add the watch to that plan and AT&T tech support was never able to get it to work because the phone is on a different plan.

It seems like with family share I could set it up on my wife's iPhone. But I'm not a kid or elderly person, so can the family sharing be setup with no limitations and use it like I currently do. Would I be able to have it paired with my own iPhone, but use family share for the LTE enablement. I'm guessing this won't work, but thought I'd ask.
 
Yes you could use Family Setup and the required Family Sharing feature to pair your Watch to your wife's iPhone. This will add a Access Apple Watch plan to your families AT&T personal plan. The bad news is that you can't pair your Watch to your iPhone while it is paired to your wife's to get back full function and keep the LTE service active on your Watch.

Here are the key features that are supported and are not available using Family Setup.

Health and fitness features:
  • High and low heart rate notifications are available for users 13 and older.
  • Fall detection is available for users 18 and older.
  • Users under the age of 13 can use move minutes, rather than active calories, for their Move goal in the Activity app.
Apple Pay features:
  • Apple Cash Family is available to users under the age of 18, allowing them to make purchases and send and receive money in Messages with Apple Pay (United States only).
  • Apple Pay using a credit, debit, or transit card in the Wallet app is not available with Family Setup.
The following features and apps are not available: irregular heart rhythm notifications, ECG, Cycle Tracking, Sleep, Blood Oxygen, Podcasts, Remote, News, Home, and Shortcuts.
