On The attached, there is one watch with and with out this chrome edges around the diodes, does any one know the reason for this? Models of watch, materials etc?

Both appear to be first gen (Series 0) Apple Watches. The watches that have a ceramic back have the metal rings around the diodes. The composite backs don't.

What porkrind stated is true of the Series 3. All Series 2 watches have the ceramic back. Series 1 have the composite back. The back of the Series 0 aluminum case was composite, other cases were ceramic backed.
