I have owned 4 Apple Watches since they came out. I have the same issue with each one. After about 2 years they stop recording workouts with any consistency. I do the same workout on the treadmill at the same speed and time every morning. I burn between 830 and 850 calories. That is an acceptable variation. All of the sudden this week i am burning only 740 -750 calories for the exact same time and speed. That is too wide of a variation. What is it that goes wrong in the watch?
 
Is it recording your heart rate? Is there any variation in your heart rate between when the calories are in 800's as opposed to when it is in the 700's?

the minimal data you provided are not necessarily inconsistent.
other kinds of data points need to be looked at to understand if the measurement is wrong.

look in the apple Health app for
METs and VO2max.

what i found out about fitness is that the more fit i became (largely on account of measuring myself with the apple watch), the easier (less exertion) that i needed to do my exercise. and this had the effect of total reduced calories expended for the same activity as before.

the more fit you become, the more you need to push yourself to achieve the same amount of active caloric expenditure. your body becomes more efficient at doing that level of effort.
(however, your basal metabolic rate (resting rate) would increase as you become more fit).

V02 maxis running above average at 33.3. that is up about a point over the last month. Mets are averaging abut 13.9 during workouts. they range in the 13.3 - 20 range during the last month. thanks for your input
