Apple Watch not matching language on iPhone

Running iPhone XS, iOS 15.0. Apple Watch 5, watchOS 8.0.

My phone region is set to New Zealand, language English (New Zealand). The Watch app is set to mirror my phone. Why then does it report the language as English (Australia)? I have tried restarting both phone and watch.
